Truffle-growing abilities of the evergreen oak
Sometimes called "holm oak" or "false holly", the evergreen oak (Quercus ilex) is emblematic of the Mediterranean region, even if it can be found elsewhere in France (such as in the southwest or on the Atlantic coast). It is a southern tree that needs sun and heat in summer. It is particularly adapted to seaside cultivation since it tolerates wind, sea spray and drought. On the other hand, it is sensitive to the cold and its average hardiness only allows it to resist up to -12 °C (it is generally not planted above 1200 m). The evergreen oak likes aridity, it supports mediocre soils even rocky and appreciates calcareous and well drained lands. Appreciated by wild boars for its acorns, this oak needs to be protected if it is to be used for truffle production. Depending on the environment and the climate in which it is planted, the evergreen oak will become an excellent host for Tuber melanosporum or Tuber aestivum.
About the black truffle (Tuber melanosporum)
A true "black diamond", Tuber melanosporum is as rare as it is sought after. It can be recognized by its rounded shape, sometimes bumpy, and its black flesh marbled with white. This truffle gives off an intense perfume and reveals fine aromas that make it an exceptional mushroom. Emblematic of French gastronomy, the black truffle can be eaten cooked or raw, as a seasoning or as an accompaniment to a dish. Black truffles are harvested from November to early March. Depending on the age of the plant and the land chosen, you will have to wait between 6 and 8 years to harvest your first black truffles.
